Custom Vat on drop down products

Does anyone know if there is a way of applying custom VAT to many products when the products are drop down menus with components and pricing overrides for each option?

Have heard that 'associated products' may work, what is the easiest way of doing this as my client wants to keep the drop downs but also needs custom VAT adding?

Using the 'Associated Products' route is the way to go, this will enable you to draw the VAT from the associated product.
