Pay by cheque

I can't find an option for 'Pay by Cheque' in the Payment Methods - something I would have thought was truly basic! Neither can I add such an option from the setup page.

I just want a simple option to allow customers to place an order and send a cheque by post. I want to be able to make a few comments with the option such as:
'Goods dispatched after cheque cleared.'
'Please make cheque out to ...........................'

I assume I need to doctor a template? All help gratefully received.

I had a problem with this. Have a look at this link:

I did modify the appropriate cart template to add some instructions so customers were clear on what happens
