At the moment my site allows to uk and all other countries via the drop down box on the checkout page. How can i modify this so that you can order to the UK only? Is this possible?

View | Business Settings | Shipping in the shipping bands right click the zone and click properties ... this opens a dialog where you can remove or add the member countries.
In advanced | locations you can add or modify the country text there if you need to make the shown text more specific -
