I can't seem to be able to display foreign language text within my product descriptions. If i copy and paste foreign language text into the product desc. field it comes up as illegible characters (???? ??? etc...) anyway I can enable this?

Unicode is not supported. I believe (someone please correct me if I'm wrong) that you are limited to the ASCII character set (extended set perhaps).
If you want to include Greek characters that are not part of the ASCII character set then you could perhaps create some images containing the text and include them in the descriptions. Not Greek SE friendly but at least your visitors could read it.
There may be other alternatives - search for unicode in the forum.
