Exporting Snapshot without Data

Please can someone explain how to export store without including customer data.

Snapshot always includes all information, there is no option to exclude customer data - however when you import a snapshot you can choose to not import order information.

If you just need to transfer you product details you might be able to use hierarchical export to do this, you use the export option on the File menu to do this.
