components-attributes: necessary?

I've written into my choice names the price per choice. For example 4.0z Bottle: £3.99 then 110z bottle: £8.99 and so forth. It looks ok then I followed the user guide and started to create components to paste the attributes into.. but it looks exactly the same on html.

So my question is why not just do that rather than go to the hassle of creating new components (I have hundreds of products)?

If it is ok to do that can I add to my basic layout a price that says 'From £3.99' so that folks know that it will depend on the size of choice they buy?

If you have a lot of your products duplicated over your store and you want to change prices you will soon find out. Also if you want to do stock control you will also need it. There are probably others, they're the first two that spring to mind.
