One of my shops is called Scentsations of Troon (this is the name applied under Business Settings). If I have a section in Actinic called Chanel, the page subsequently appears on Google as Scentsations of Troon Chanel. If I have a section called Prada it similarly appears as Scentsations of Troon Prada.

Is there any way of the Chanel page just appearing as Chanel without the Scentsations of Troon in front of it, (or how about Chanel at Scentsations of Troon?). I'm wondering if it may get a better ranking if Chanel came first in the page name.

Not sure if you are referring to the page title or the page name, but both can be set in the layout tab of the section. If you leave the page title empty then it will use the company name followed by the section name otherwise it will just be what you fill in.
