Adding notes to orders?

Is there any way to add notes to orders, for example to let others know that the order has been dealt with etc?

No there isn't, but that is going to be a feature in the next major release.

All you could do is a add a zero-cost adjustment that will show up in the 'Line Items' tab (and on the invoice) with details about order status.
