Can the payment options be configured so that the customer can insert their Paypal/Nochex email addresses and I can request the funds later manually as opposed to `instant` payments. I would also have to insert a bit of text saying that the fund request will follow when we are about the process the order.

Any other method I can use as a work around, without actually connecting to the Paypal or Nochex sites, just having a form(?) to enter the relevent email address?Comment

You need to talk to PayPal or NoChecx about this.
I doubt it is possible as you need the customer's PayPal password to complete a PayPal transaction - and I doubt very much that a customer will give you that.Comment
