I have set up various shipping options to the US. Up to 4.5 kg is cheaper by Royal Mail. From 5kg up is cheaper by courier.

Is it possible to show the courier option ONLY when the total weight of products ordered reaches 5kg?

I'm afraid not - there is no way to set a minimum level on a shipping class.

All you can do is create a shipping value for up to 5.00kg that is obscenely expensive. As shipping options are ordered by cheapest first, it will never be displayed to customers unless they specifically choose it.
