Extra Character for order Ref

Is there a way to add some additional characters to the order ref so that I know which site is has come from.

i.e. to make all orders from my site called vitmains-for-the-eyes to be VIT-then the rest of order number a now.

You cannot do what you propose.

What you can do, however, is change the 'Order Number' in 'Help | TroubleShooting'.

You can make one site 1000000, make the second site 2000000, the third site 3000000 etc.
