Changing the back button

Please could someone tell me how to change the "back" button in the checkout pages to say "Continue Shopping"

The 'Back' button on the 'Checkout' pages will always just take you back to the previous checkout page.

Are you talking about the 'Cancel' button? This is the one that will take you back to the store. You can change the text on this button by going to 'Design | Text' and then clicking 'Go to'. Go to ID '505' (Phase -1) and edit the text there accordingly.
