The long way round.
You could create a special template for that product called eg Act_oos.html that displays that message. You would have to edit the product everytime though and keep swapping the templates..

So I take it there is no way to fool Actinic and still have the products 'greyed out' but still be on the site?

I don't know of a way but maybe Chris or somebody does! See http://www.chariotsonhire.co.uk/acatalog/Triples.html they have an "out on hire" displayed, so maybe they have some clever way. They are somewhere on this forum I think.

To make things more complicated for me is that we have many products that feature 10 or more choices of that product so some choices (or sizes) will be in stock and some won't. I wonder how an 'Out of stock' message could be put on those type of products?

The items that are 'greyed out' is our only way of visually seeing what products are on the site or not at the moment. It would have been great if I could of kept that aspect.

If a product is 'greyed out' (i.e. hidden on the website) then it will not appear in the online store.

All I can recomment is maybe changing the product names from 'Blah' to 'Blah - OUT OF STOCK'.

This will be nice and visible in the tree.
