Okay, I've searched high & low -- where do I set the starting order number??

Following this advice I am trying to set up our first order number (so that our orders follow our old system's numbering) but when I go to Help > Troubleshooting, the update order number box is greyed out.
Any suggestions please as to what I might be doiong wrong?

I think you have to get it first - there is an option for that on their as well.
