Is there any way of having a product which is not displayed in the searches or in the site map - or anywhere else - but that can still be selected by typing the http address directly or using a link?

There are times when due to a mistake here or because a customer changes their mind that the overall cost of an order increases a little. This mostly happens with shipping.

Ideally I would like to have a product called "Special Shipping Charge" which can be clicked through to so the customer can pay the necessary amount but is not visible to anyone else.

Can this be done please?

There is no way to do this I'm afraid. The only thing I can think of is putting it in a tucked-away sub-section somewhere that people are not going to trip up over unless they deliberately want to go there. If you don't enter a full description then it will not show up in very many searches.
