is there any way I can change this to suit different sections
for instance I would like to add some different key words that aren't part of the product name or section title for one section in particular.
You get to choose the page title on every section as standard already, have you seen/used this field when setting them up? If not just use that part. Couple of tutorials on my site would do you some good in this area tbh, i think you are missing the basics, they will spell it out for you.

Do you have an SEO company or SEO software giving you some weird and wonderful ideas for improvement here? Or is it you just going off on one?
Actinic is very good out of the box and they have a gone to a lot of effort making this kind of thing easy for you. Granted we do not know what your background is, but your post count suggests a new Actinic user, if I'm wrong I apologise.

Messing around with the h1 and h2 tags may well be counter productive from an SEO point of view.
Having said all of that, if you could post a scenario of what you are trying to achieve and a URL we'd have more information to go on.
From an SEO point of view - I would recommend using the H1 tag only once, maybe as the actually company name to define what the overall site is about - then use the H2 tag once for your main content heading for your section and product page (if one product per page) headers.
Then you could use H3 and H4 tags as many times as you like as sub headers. I use this approach on many sites I've developed, and always get good results. I used to use these same methods when I worked in Web design agencies, and part of my role was to do search engine marketing campaigns.
Also dont be shy to use title within your H tags i.e. <h1 title="my company selling such and such">my company</h1>
However, I would recommend like the others have suggested, in seeking the services of a professional SEO company that can help you with optimising and link building. Plus if you've adapted an Actinic layout the H1 tag is used at section level which isnt ideal - but still gets results I guess.
I personally would of made the "Kids Music Shop" logo at top of your page a H1 tag - and used CSS to hide the text (in an SEO friendly way!) and display the logo so people are known the wiser!
Also, I'd move away from a table based layout and more to a pure CSS based layout rather than the current table based one!
hiding h1 tags and keyword stuffing h1 tags are well known to google as spam techniques.
As said previously actinic makes a good job of Seo as standard. As I asked post a URL and you may get more help also there was an exact some post last week where I posted loads of Seo help. Find it and sack your seo company as they obviously don't know how actinic works - I don't want your business
I take the point you make - but it really does depend what practises you use! I for one would never use or advise anyone to use any kind of black hat SEO techniques!!!
True, if Google sees a lot of display:none in use in a CSS file it may suspect spamming - but display:none is also used for the greater good sometimes!
However, if text-indent:-999999px is used and the logo is a background image of the H1 tag that's not a bad practise boys and girls!!! and a modern approach to overcoming Google thinking bad practises are being used. Plus I was not advising anyine to stuff lots of keywords into the title attribute of the H1 tag - I was talking more about a simple structured sentence.
Think sometimes comments on Forums can be taken out of context - which is why I usually avoid commenting on forums like these - as when you try and provide helpful advise it sometimes backfire
