Shipping category to exclude "Next Day"?

For most products I want to be able to offer different shipping options, such as:

Standard
Next Day
Next Day AM Delivery

However, for a few special items, that aren't held in stock, I want to offer only the standard delivery option.

I thought I might be able to do this using shipping categories (which has the added benefit of allowing me to charge a different rate for Standard delivery). But I can't seem to figure out a way to do this as for the next day options it forces me to set a price.

So is there another way to exclude certain products from the next day options?

I'd fudge it using weights.
