Is there any way to use a spreasheet format to import a working database?

For example, if you have a column in the spreadsheeet showing category, sub-category, sub-subcategory in the form of A|B|C can -
1 That layout be automatically created?
2 That the fields associated with that product be automatically populated?

I suspect not, but it would be very, very, very nice to have that feature.

This is exactly how Flat FIle Import works. Have a look in the Help file for Importing and Exporting / Importing - Flat File.
