Variables - to display or not display, that is the question!

Been struggling with this and have scoured the Help section within Actinic V8. I have created some new Variables which I have added to my existing Content Page.

However, these new Variables seem to display (or not display) according to when they feel like it and not when I want them to!...

Some of my products have a complete set of library variables but others do not.

I now need to edit variables of some products only to find they are not defined.

The variables are all defined in the library.

I guess that I must have edited something in the...

I have used block ifs to create different headers for different section of the site which works fine (it uses variables of "category") - see code below;
