You ought to be converting 1-2% of those visitors into customers. So something like 200 - 400 sales a month. If you aren't then I'd definitely suggest getting someone to do a redesign for you. It'll cost you more than Ł200 but the return on that should be fairly quick.

To say your products and pages are optimised really is laughable to be honest, you are a long way off an optimal setup. If you want to change things you have to accept that short term rankings might be affected, but we only ever take long term views in that area and if they are not positive long term, then you shouldn't be doing them anyway.
You can't change things if you reject or get scared of change, you will end up half baked, which from an seo POV is exactly what your store currently is.

I'm just in the motion of if I do some major changes I don't want to lose my page 1 rankings on some very competitve keywords. I agree my pages arn't perfect and some could be improved if I had time. However, they are better than most... I wouldn't say my pages were laughable, to be honest I think thats a bit of an insult. I hit page one out of 7,750,000 results on the very competitive keyword motorcycle parts and thats what i focused on and thats what I achieved.
Not really, its just the nature of the beast..... Motorcycle people tend to buy more in the spring and summer time... This time of year its quiet...
I agree that certain products are seasonal, but I'm surprised your vistits have dropped by over half. Does anyone else have any thoughts on this?
If you know it's going to be quiet for the next couple of months, then it would be a good time to re-organise. I know you want to reduce the amount of sections, but going to Single Product per Page would do wonders for SEO as has already been mentioned. Have a look at the tutorials on Lee's site. Reducing the amount of sections you have will not automatically mean it's easier for customer to find what they want. Maybe you should look at the search facility that stinkyink use as that could be a way to help people navigate your site.

Your thoughts are stuck in a rut and you are scared of change. Rightly so to some extent, but if you want to improve, you have to accept new ideas and embrace them.

Traffic is vanity - sales are reallity. If you are not converting then your visitors dont like what they find - perhaps they all go off to your competitors via your google ads
