whats the best way to add a 'mobile number' field to the checkout?

Ah sorry you are V8, there's a good reason for you to upgrade, if not, rename a field that is not being used like fax number or something.

Phase 0, ID 11 - change the Fax to Mobile.

Ive got 'multisite' v8.

V8 to V9 should not be a problem, but this really depends on how much modification you have done.

But you can install v9 alongside v8 so can import a snapshot and check everything is working 1st
