Checkout bookmarking Vs. Hide on web site

Hi - would appreciate some clarification on this one:-

Scenario:
Customer "A" goes to checkout with product "X" but bookmarks page instead of completing. Leaves site.

Due manual stock control - Product "X" is then hidden on web site due to low/no stock.

Customer "A" returns 3 hours later by activating bookmark and manages to place order for product "X" although now hidden in catalog.

end scenario.

Is this a function of the session or cart cookies and if so does anyone have an "optimum" setting to avoid this happening or is there another way round this?

You can use Web | Configure Expiry Periods to reduce the number of hours allowed to retain shopping carts and number of days for shopping lists.
