You would need to get the custom theme from whoever designed the site (I'm guessing that would be your ISP). It will come in the form of a snapshot. Alternatively, you could re-apply one of the standard themes and start designing from scratch (Design | Themes).
With regards to going to v8 - did you try any of Chris' suggestions. I believe that the best option for you would be to install v5 (the same version as your ISP has and import the snapshot into that. Then you could install v8 onto the same pc and ask it to upgrade your v5 site during the installation (you can get the latest v5 software (5.1.6) from our website or older versions from http://support.actinic.com/versions/). Don't import the v5 snapshot into the current version that you have or you will overwrite the orders - so you will have to do this on a different pc to the current v5 software.
