When placing an offline order there does not seem to be an option to add an `adjustment` like when dealing with a downloaded order. I use this when adding an item not listed in our products...

Do you mean adding a new product to the catalog or adding an existing product from the catalog into the order?
If it is the latter, then once the offline order is completed, double-click on it and click on "Add New Item" and then 'New' in the window that opens up.

Adding an item to an (offline) order that is not listed in the catalog in any way.
Example - maybe six badges that I have got in especially for a customer, to be added to an offline telephone order along with some badges that are already listed in the product lists.
Basically `Adding an Adjustment` like in a normal downloaded order.

You can "Add Adjustment" once the entire offline order process is complete.
You can try a workaround for adding the badges not listed in your catalog.
You have the option of increasing the quantity for the existing order and then click Add Adjustment to put in a note for the customer about the new badges in this window.
