Sadly we dont do a transfer in service as the volume is so low. We dont 'recommend' any particualr provider but I hear good things about 123REG and Im sure others here will have some suggestions.
As for the time it can take, that's going to be somewhat constrained by how much you have access to and can change. Its not likely to be a 5 minute thing though

assuming you are using something like Outlook you will have mail.harrisonstackle.com in the smtp/pop settings, change that to the IP address of the server (deleted) and you should be able to pull down your email and reply

so you can get to your site. you 'should' be able to adjust your EC settings and download orders etc, but obviously no one is going to find this domain

my concern using the temp domain I've setup will be if google find it and index your content against it. Do you have another domain (harrisonstackle.co.uk) you want to use? or should I just take down the temp domain?

Go to Nominet and create an account with them if you have not already done so.
Then go to, say, www.1and1.co.uk and "buy" the domain name again by searching for it and confirming that you are the owner of it and you want to transfer it to them.
Then go back to http://www.nominet.org.uk/uk-domain-...ange-registrar , log in to your Nominet account and select the registrar change service. It will cost you £10 + VAT but it's quick and in my experience, always successful.
Hopefully by early next week you should be able to manage the new name servers settings so your website works again.
