I totally understand what you want to do, however in order to give you the solution, i will need answers to the questions i asked. Its impossible for me to give you a definite solution unless you do this as i do not know whether you charge per item or per order etc. I could also do with a real example of when this does not work and the details on those products that fail.
Off the top of my head i would have 2 shipping bands:
0.10 kg - £0.00
10Kg - £2.95
I would then put 0.01kg (make sure you put 0.01) as weight on every gift voucher. Reason for 0.01 on product and 0.10 in shipping band is to cover if somebody orders more than 1 gift voucher.
Then set default weight to 0.25kg i.e. if you do not put a weight in on a product, it will assign this to every one.
This would then give me the following scenario:
If i purchase a gift voucher on its own, its weight is 0.01, so i will be charged £0.00
If i purchase 4 gift vouchers, their combined weight will be 0.04, so i will be charged £0.00
If i purchase a product on its own, then it will weigh 0.25, so i will be charged £2.95
If i purchase 3 products, then they will weigh 0.75, so i will be charged £2.95
If i purchase a product plus a gift voucher, then the weight will be 0.26, so i will be charged £2.95
and finally.......
If i purchase 3 products plus a gift voucher, the weight will be 0.76, so i will be charged £2.95
I am presuming things here as i don't have the full info, if you can provide the info mentioned i will confirm a final solution.

When i went to your checkout the SSL certificate Authority image is not working
Checkout is one word also, not check out
And the guaranteed option you provide is an input box, not a yes or no choice, this could be confusing. Do you want them to type yes or no in the field?
